- 1/2 cup Crisco shortening
- 3/4 cup brown sugar
- 1 egg
- 1 tablespoon dark rum
- 1 cup unbleached all purpose white flour
- 1/2 teaspoon baking soda
- 2 pinch salt
- 3/4 cup white chocolate chips
- 1/2 cup raw macadamia nuts, chopped

Preparation
- Preheat the oven at 325°F.
- In the bowl of a stand mixer equipped with the flat beater, mix the grease and brown sugar for 45 seconds to 1 minute at medium speed. Scrape the sides well.
- Add the egg and rum then continue beating for 30 seconds.
- In a bowl, combine flour, baking soda and salt. Always at medium speed, incorporate the flour mix in the bowl and continue beating for 1 minute until a smooth consistency. Scrape the sides well to incorporate all the ingredients!
- Remove bowl from stand mixer then add chocolate chips and nuts. Mix well using your hands to make sure ingredients are well combined.
- On a big un-greased cookie tray, place 1 big tablespoon of the mix leaving about 1’’ in between each. Lightly press on top of each balls then place tray in the oven. Cook for about 20-22 minutes or until cookies are lightly golden on top. Flip 180 degrees halfway to make sure they cook evenly. Let cool down 10 minutes before jumping in!
