- 850 g pork tenderloin, cut into thin slices but not too much either (The marinade tends to break down the protein of the meat)
- 1/2 cup Silver tequila
- 2 tablespoons olive oil
- 2 tablespoons brown sugar
- Zest of 2 limes
- The juice of 4 limes
- 3 large cloves of garlic, finely chopped
- 20 fresh oregano leaves, finely chopped
- 1 shallots, finely chopped
- Salt and pepper from the mill

Preparation
- Place the pork in a large airtight dish and set aside.
- In a large bowl, put the rest of the ingredients, season salt and pepper generously and mix. Pour half the marinade over the pork and mix. Reserve in the fridge for 3 hours and stir from time to time. Reserve the rest of the fresh marinade in the fridge.
- Skewer the pork and set aside on your favourite plate decorated with duck or old wooden cabins from the days of the fur hunters.
- Preheat the barbecue to maximum power and reduce to medium power. Oil the grates.
- Place the skewers on the grill and cook for 8 to 10 minutes or until the pork is cooked but slightly pink. Baste constantly with the rest of the fresh marinade!
