- Smoked picnic pork shoulder with bone, approx. 2.5kg
- 1 liter pineapple juice
- 473 ml L’Infusée aux Trois Thés white beer by Brasseurs du Monde (or other white beer to taste)
- 5 cloves
- 1/3 cup maple syrup
- 6 large garlic cloves, peeled and crushed
- 1 small yellow onion, finely chopped
- Salt and freshly ground pepper

Preparation
- Preheat oven to 350°F.
- In a large casserole dish, place pork shoulder, rind side down.
- Add remaining ingredients, season generously with salt and pepper, and stir. Cover, bring to the boil and place in the oven. Bake for 3 hours, stirring occasionally.
- Carefully remove the ham from the casserole and place on a work surface. Fluff the meat and discard the fatty bits. Serve with mashed potatoes and
- drizzle ham with pan juices.
