- 1 1/2 cups fresh blueberries
- 1/4 cup of sugar
- 1 tablespoon lemon juice
- 1 tablespoon dark rum
Ingredients for the parfait
- 1/4 cup mascarpone cheese 42%
- 3/4 cupt hawed Cool Whip whipped cream
- 2 packs (2x 170g) fresh blueberries
- 200 g Blueberry Mubbles Fruit pearls, drained
- About 1 liter of vanilla ice milk
- The zest of 1/2 lemon

Preparation
- In a saucepan over high heat, add the ingredients to the grout and mix. Bring to a boil, reduce heat and simmer for 3-4 minutes to soften the blueberries. Crush them. Puree and pour into a cup. Allow to cool for 30 minutes.
- Pour the mascarpone cheese and whipped cream into a large bowl and beat in the mixer at medium speed for 2 to 3 minutes to combine well. Reserve in the fridge.
- In 4 Mason jars, place in the bottom about 1 teaspoon fruit pearls, 1 teaspoon blueberries and 2 teaspoons of coulis.
- Then add a big ice cream ball and press lightly to compact. Then add 1 teaspoon blueberries, 1 teaspoon of coulis followed by 2 teaspoons whipped cream.
- Divide the lemon zest in the jars followed by about 1 teaspoon fruit pearls. Add another big ice cream ball followed by 2 teaspoons of coulis.
- Divide therest of the whipped cream and garnish with fruit beads, blueberries and coulis on top !
