- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon old mustard
- 1 teaspoon freshly chopped chives
- 1 teaspoon freshly chopped basil
- Salt and pepper from the mill
Ingredients
- 4 bread slices from a rustic loaf, lightly toasted
- Curly lettuce
- 6 slices of provolone cheese
- A small handful arugula
- 250 g (8 slices) F. Ménard bacon rounds, cooked crispy
- 1 large ripe but firm tomato, sliced
- 1 large ripe but firm avocado, sliced

Preparation
- In a bowl, add the ingredients for the mayonnaise, season with salt and pepper then mix. Reserve in the fridge.
- On the bottom bread, spread a nice amount of mayonnaise. Add a few leaves of lettuce and arugula, to taste, followed by slices of cheese.
- Add bacon followed by sliced tomatoes and avocado. Spread mayonnaise on top bread, place bread on top and press lightly. Stitch with long toothpicks and cut in half!
